I love a good chicken salad. It's just such a refreshing sandwich spread in the heat of the summer. I've tried endless recipes, and it's hard to find one that I don't like. In fact, last summer I made a whole pinterest subboard of just chicken salad recipes. But this one is classic, with a little elevation from the dijon mustard. It's super easy and we devoured the entire plate of mini croisantwiches.
Ingredients
2 cups chopped chicken (I slow cook a whole chicken and use that)
1/2 cup mayo
1 stalk celery
1 green onion diced
1 tsp. dijon mustard
1/2 tsp. seasoned salt
pepper to taste
1 tsp fresh dill
Combine mayo, mustard, salt, pepper and dill.
Stir in celery and onion.
We love this on croissants, but also did wraps and sandwiches. For a crowd, you would need to double or triple this. This amount was good for our family of four with no leftovers.
